- Three and a half cups of all purpose-flour
- One teaspoon of salt
- Two tablespoons of baking powder
- One cup of butter (unsaturated and served at room temperature)
- Two large eggs
- Two cups of sugar
- Melted dark or white chocolate chips
- Two teaspoons of pure vanilla extract
- Confectioner’s sugar (useful for dusting purposes)
- Fifteen ounces of fresh ricotta cheese. Whole milk a preferable choice.
Directions:
- Start by prepping the oven. Preheat it……. get it up to 325 degrees F. You should line a baking sheet that is 9 by 13 inches. Set aside a non-stick baking mat.
- Get a large bowl and in it mix together, the salt, flour and baking powder.
- Cream together sugar and butter in an electric mixer fitted with a padded attachment. Mix till the mixture turns pale yellow in color.
- In the mixture throw in the eggs, one at a time, making sure you mix after every addition.
- Add ricotta and mix the whole set up until it combines perfectly.
- Cautiously scrap down the sides of the bowl and fold the flour mixture in.
- Pour butter in a sheet (baking) that you had prepared earlier, spread it evenly.
- Start rolling the dough until it becomes flat and three quarters of an inch thick.
- Get a 3 by two and a half inch bear shaped cookie cutter. Don’t forget that you have to cut the dough in bear shape before you add the dough in the oven.
- Transfer your pre-cooked bears into the oven and allow them to bake for around 25 minutes.
- Take your dish from the oven and let it cool off entirely.
- Use the confectioner’s sugar to dust off the bears.
- Get hold of melted chocolate in a small coronet paper and draw the eyes and the mouth of the bear using chocolate.
- Allow the chocolate to set and you can serve your bear hugging biscuits! Enjoy!!!
