 You will need the following ingredients: Purchase thirty fresh sweet cherries (either “Stella” or “Bing”), 8wt oz chocolate preferably dark that has 60% of cocoa. Get the best quality and most shinny chocolate bar, three quarters cup of beer if you are a beer person.

 Follow the instructions: Pit all 30 cherries with either a paring knife or use a pitter. Afterwards place the cherries in a tight layer on a loaf pan bottom. Now pick the beer and pour it on top of the cherries to a point where they are almost covered. Put the mixture in the fridge and allow it to soak in between twelve to twenty four hours. Now take out the cherries from the liquid and use a slotted spoon to place the cherries on a plate that is fully covered with three to five  paper towels. Let your cherries drain for twenty minutes. Chop up the chocolate. Place slightly about half of the chopped chocolate at the top of a double boiler or if not that a metal bowl that you have on top of a pot of water that is simmering gently. Set the heat to medium low. Continuously stir raising the temperature between 115 and 120 degrees. Take the bowl away from the heat and add in the mixture a portion of the remaining chocolate and use all your might to stir it vigorously. Continue adding more chocolate and stir. Continue stirring till when the temperature nits 90 degrees. Add the cherries in portion three to four at a time. Now roll the cherries round the bowl and use a fork to remove them. Place them on a sheet of wax paper to set. Leave the temperature between 88 and 91 degrees. If you have it make use of a programmable heating pad. Just leave your chocolate cherry’s to dry for two hours before serving. Enjoy!!!
