DIY Signature Mini Chicken ‘n Broccoli Pies

After a hard day of work you want to go home, have some dinner and rest. But when you get home you notice that you do not have anything to eat and also you are not in the mood of cookie. No worry!! We have the perfect quick dinner idea for you: mini chicken’n broccoli pies. Delicious!!!
For the chicken / broccoli mixture you will need: one tbs olive oil, one lb chicken breasts (no skin, no bones), a chopped onion, one cup of broccoli (thawed & drained), salt and pepper for taste, four oz of Cheddar cheese
For the baking mixture you will need: half cup of “Original Bisquick Mix”, half cup of milk and two eggs
Additional: a muffin pan


Start with the oven: heat it at 375°F. Use  little bit of olive oil or also cooking spray to grease the muffin pan. Add olive oil into a skillet and set the skillet over medium heat. Add the chicken breasts. Cook it for about 7 minutes. Now add the onion. Add also the broccoli and salt and pepper to give taste. Don’t forget to stir occasionally. Cook the mixture for approx 20 minutes. Let it cool. Add also the Cheddar cheese over the mixture. Take a medium size bowl and add the ingredients for the baking mixture. Use a fork or also the mixer to blend everything. Use a spoon and add in each muffin cup one tbs of mixture. Now add the chicken / broccoli mixture. Add once again one tbs of baking mixture. Put the muffin pan into the oven and bake for approx 30 minutes. Remove the mini pies from the muffin cups using a knife (loosen sides from pan). Let it cool and serve. Enjoy!!!
