DIY Spinach Lasagna Rolls

Bringing you today another delicious and easy to make DIY recipe that I found on “Budget Bytes” blog. As I said a delicious recipe that you can make quick and also very easy. You can serve these DIY spinach lasagna rolls with some yummy garlic bread or with a simple salad. Also, you can add beside spinach some mushrooms or what meat you like.

You will need the following ingredients: one lb. of lasagna noodles, 15 oz. of Ricotta, one cup of Mozzarella (has to be shredded), 1 / 4 cup of Parmesan (has to be grated), one egg, 10 oz. of frozen spinach, two and a half cups of marinara sauce, salt and pepper to give taste.

Follow the instructions: Preheat your oven to 400 C. Boil the lasagna noodles accordingly with the instruction on the package. After the lasagna noodles are boiled use a colander to add them under some cold water and let them to drain. Its time to make the filling: take the frozen spinach and add it in the microwave. Take it out from the microwave and take out as much liquid as possible. Use a large bowl and mix the following ingredients: the spinach, the Ricotta, the Mozzarella, also the egg, parmesan, salt and pepper to give taste. Use a spoon and mix everything very well. Use a safe bowl (it works best also with a glass safe casserole) and add a little butter on the bottom of it so that the noodles and everything else won’t stick. Take some noodles and lay them on your cleaned working station. Using a spoon add some filling on every noodle and roll it up. Add the noodle in the oven casserole. Repeat with the other noodles until the filling is no more. Take the marinara sauce and add it on top of the noodles. Make sure that everything is covered with the marinara sauce. Use foil to cover the safe casserole. Bake in the preheated oven for about 30 minutes. Take it out and serve. Enjoy!!!
